Question : Problem: How set up IMAP for iPhone on Exchange 2003?

I'm attempting to set up IMAP on Exchange 2003 so we can test the iPhone on it.  We've never used IMAP.  I started the Service, but I can't find in Exchange Manager where to set up the name of the incoming smtp server required for the iPhone setup.  Can anyone assist?

mail.domain.com hopefully resolves to the public IP address of your router, so the name should be good for everything you use (SMTP, OWA, IMAP, whatever).  The router needs to be configured to forward incoming port 143 (for IMAP) traffic to your Exchange server.  Can you verify that it has been?
