With all of these non-xeon Dual Core processors on the market is there an advantage to using a Dual-Core xeon, on a server (Windows Server 2003), as opposed to a non-xeon processor?

In a business server, yes. You can't get a system that supports multiple CPUs running non-XEON processors. Sure you get the multi cores, but which is better for a SQL server - 2xQuad Core Xeons or a single Quad Core Pentium?
