I haven't played with 2K8TS too much, but the timeouts should be part of the RDP-tcp connection properties.
1.  AdminTools:TSConfiguration
2.  Rt-click on RDP-Tcp, select Properties
3.  Go to the "Sessions" tab, select "Override user settings" and change your settings for "Active session limit:"  - that's the setting that will time out connections for users if they haven't done anything with the session (keyclicks or mouse movement).
4.  Apply and test.
