Hello,
When connecting two Cisco 3750s using StackWise cables, should I connect only S1-P1 to S2-P2 or S1-P1 to S2-P2 and S1-P2 S2-P1 - in other words should I use two StackWise cables to connect two switches?

You should use 2 cables using S1-P1 to S2-P2 and S1-P2 S2-P1 otherwise it will only operate at half bandwidth.
