I don't think you can save overwrite into default quick sets. But you can set everything you want, save it to a new Task Quick Set name, and then select it from the dropdown box and click apply - OK. It should save your setting and use this setting for your printing after that.
You can create 25 Task Quick Sets and which one is selected from the drop down box will be used for your default printing.
