Try opening the music window, going to Songs and hitting shuffle. Make sure the iPod is vertical (not in coverflow mode). See if that works. If not, when the song is playing and the ipod is vertical, tap on the screen, this brings up a few more settings such as continue to play after getting to the end of the playlist/selection and shuffle.
