worded .. I've done this type of  modification a number of times .. it is actually quite simple and not risky .. if you want to be 110% safe do the following

1. Duplicate iSync and keep a backup of the application.
2. Open Address Book and select all cards .. pick Export vCard from the File menu and save a VCF file containing ALL your records.  If you've a way of backing up your phone contacts do that too.
3. Now make the iSync edit as described above, open iSync and add the phone and perform your first sync.
