Hey,
Use the Print Migrator Tool from Microsoft to create the printers on the new system:
http://www.microsoft.com/WindowsServer2003/techinfo/overview/printmigrator3.1.mspx
Then apply the register change in this KB Article to the new Server (ignore the error associated with it):
http://support.microsoft.com/kb/281308
Change the name of the old Printer Server to anything else.
Create an Alias (CNAME) in DNS for the old Printer Server Name, point it to the new Printer Server name.
Then all clients should be able to continue using the printers as if nothing happened. At least in theory.
