Question : Problem: Saving deleted files with Robocopy?

I have been using Robocopy and loving it. I am backing up data overnight from source to destination folder. The goal is to keep a mirror in case I need to restore a complete folder or huge amount of data and no extra junk (deleted files over weeks, months). But I am worried someone deleting files without no one knowing for weeks and then if I go back to that set of mirrored data, obviously those deleted files won't be there anymore. Is there a way with Robocopy to mirror data and whatever has been deleted at the source is moved to some "recycle bin" for me to keep over a long period of time or forever? If Robocopy doesn't do that, is there a similar application that will do that or do I need to look into upper grade backup software? I have used Undelete years ago but would want to know if a small utility offers that feature as well. Thanks.

Other notes to mention:
If you are using Windows Vista or Windows 2003 Server, you could enable Shadow Volume Copy. This saves up to 5 copies of each modified file.
The solution I would use in your case would be that with NTBACKUP
