How do I install SQL 2000 on an iSCSI subsystem or to be exact on an HP NAS 2000?

The iSCSI disc should be presented to Windows 2003 Server as a disc which you manipulate in the normal way through Windows Disk Management. To connect to an iSCSI device you will need the Microsoft iSCSI driver. Download it from http://www.microsoft.com/downloads/details.aspx?FamilyID=12cb3c1a-15d6-4585-b385-befd1319f825&DisplayLang=en

You will also need the SNS server that goes out and discovers iSCSI devices. Download it from http://www.microsoft.com/downloads/details.aspx?FamilyID=0dbc4af5-9410-4080-a545-f90b45650e20&DisplayLang=en
